Ingredients
1.2kg Beef short rib, trim the fat, washed and patted dry.
1/4 cup Vegetable oil
3 Tomatoes, roughly chopped
1 Large Brown onion, roughly chopped
7 Garlic cloves
2 inch piece Ginger

Salt
Cracked black pepper
2 tsp Garam masala
1 1/2 tsp Cumin powder
1 1/2 tsp Coriander powder
1 tsp Red chilli powder
1/2 tsp Turmeric powder
5-6 Dried curry leaves

Method
Step 1 – Season the short ribs well with salt and black pepper. In a large pot or pan, on high heat, add the oil, once hot, sear the short ribs on all sides. Remove from the pan and set aside. (Do not discard the oil)

Step 2 – Add the tomatoes, onion, garlic and ginger to a chopper or food processor and blitz till smooth(I’ve used the Mini Prep Pro from @cuisinart_europe | Ad). In the same pan, on medium heat, add all of the mixture. Fry till half of the water has dried up.

Step 3 – Add all the dry spices to the pan, fry for a further minute and stir to combine. Now stir in 1 1/2 cups of water and add the short ribs back to the pan. Bring to a boil. Reduce the heat to medium low, cover and simmer for 2 1/2 hours or until the meat is almost falling off the bone. Spoon out any excess fat from the top. Turn off the heat, add fresh coriander, chillies and cover for a further 5 minutes and serve! Enjoy!
