Roasted Carrots with Honey Butter Soy Sauce with Scallion, Cilantro, and Sesame Seeds!

I love honey butter carrots, and the other night I added a splash of soy sauce to add some deeper flavor and complexity — it was so good I had to make it into a video!

RECIPE
1 bunch of carrots, peeled
Olive oil
Salt
1 1/2 tbsp butter
1 tsp honey
1 1/2 tbsp soy sauce
1-2 stallion stalks, finely chopped
2 tbsp cilantro
1-2 tbsp sesame seeds

Preheat oven to 400 F. Add the carrots to a baking dish, drizzle with olive oil, sprinkle with a pinch of salt, and bake for 40-50 minutes or until carrots are soft.

Heat up butter in a small saucepan on medium low heat. Add the honey and soy sauce and whisk together until smooth.

Transfer carrots to a plate and spoon the sauce over the carrots. Top with scallion, cilantro, and sesame seeds, and serve warm.
