Parmesan Asparagus Eggs!! Saw @dianemorrisey make a version of these and couldn’t stop thinking about it! So easy, such springtime feels 🌱

To make, preheat oven to 400 F. Trim off the woody ends of your asparagus. Line a baking sheet with parchment paper, and toss the asparagus in oil, salt, and pepper on the baking sheet.

Spread asparagus into two sections in an even layer. Sprinkle with some grated parmesan, crack an egg on top, and bake for 15-17 minutes or until whites have fully set. Remove from oven and top with another sprinkle of Parmesan cheese and crushed red pepper. Serve with bread or eat alone!
