Chicken & Green Bean Curry 🥘

Here’s a quick recipe to satisfy your midweek curry cravings! Mildly spiced, flavourful and is bound to become a family favourite! Serve with basmati rice or roti’s.

Ingredients
1/4 cup Oil
600g Chicken boneless thighs, cut into small pieces
200g Green beans, trimmed and cut in half
1 Medium onion, finely diced
300g Chopped tomatoes (tinned)
2 tsp Garlic paste
1 tsp Ginger paste
1 1/2 tsp Ground coriander
1 1/2 tsp Cumin powder
1 tsp Kashmiri Red chilli powder, or to taste
1/2 tsp Turmeric
1/2 tsp Ground black pepper
A pinch of ground cloves
A pinch of ground cinnamon
Garnish –
Fresh coriander

Method
Step 1 – In a large pot, on medium heat, add the oil. Once hot, add the onions, and cook until golden. Next add the ginger and garlic paste, sauté until fragrant. Now add the chicken and sauté for a few minutes. Add all of the seasonings and sauté for another 2 minutes. Next add the chopped tomatoes, stir well. Cover a cook for 20 minutes. Stir occasionally.

Step 2- By now, the oil would have separated from the tomatoes. Turn the heat up and add the green beans. Stir fry until, half of the water from the tomatoes has dried up. Turn the heat off.

Step 3 – Garnish with fresh coriander and serve! Enjoy
