White Bean Salad with Sizzled Scallion Basil Dressing!

This dish is ~lightly~ inspired by the flavors of a Chinese smashed cucumber salad, but it’s got some white beans in it for protein and tomatoes, basil, and red onion for that summer flavor!

RECIPE (serves 2)
Salad
1 (14 oz) can white beans, rinsed and drained
3 Persian cucumbers, chopped
1 avocado, diced
½ cup thinly shaved red onion
½ pint grape or cherry tomatoes, halved
Pinch of salt
Sesame seeds

Dressing:
5 scallion stalks (save the whites for the top)
¼ cup thinly sliced basil
3 cloves garlic, finely chopped
¼ tsp smoked paprika
¼ cup olive oil
⅓ cup rice vinegar

Add salad ingredients to a large bowl.

Prepare the dressing by adding ingredients, minus the olive oil and rice vinegar, to a medium bowl. Heat up the olive oil, and once it’s hot and just beginning to smoke, pour it over the dressing ingredients. Mix in the rice vinegar, and let sit for 5 minutes or so until cooled.

Toss the salad in the scallion dressing and top with sesame seeds.
