My take on the Creamy Cauliflower Jalapeño Dip from Trader Joe’s!

Made with simple ingredients (and my forever secret weapon for creaminess, Greek yogurt), this dip is as flavorful as it is nutritious! You can serve it with chips or veggies, or my absolute favorite combination, the Trader Joe’s Elote Corn Chip Dippers!!

RECIPE
12 oz cauliflower florets
1 jalapeño
Drizzle of olive oil & salt
1 ½ cups Greek yogurt
⅓ cup Parmesan cheese
½ tsp garlic powder
1 tsp onion powder
¼ tsp salt
Garnishes: herbs such as parsley, green onion, chives, etc.
Preheat to 400 F. Break up your cauliflower florets, and add them to a baking sheet. Slice your jalapeño in half, lengthwise, and add it to the baking sheet, cut side down. Drizzle everything with a little olive oil and salt, toss, and bake for 30-40 minutes or until cauliflower is soft and golden brown. Let cool.

Add the cauliflower, jalapeño, Greek yogurt, Parmesan cheese, garlic powder, onion powder, and salt to a food processor or high speed blender. Pulse/blend until everything is evenly combined and dip is creamy. Garnish with any desired herbs, and serve!
