Bits from home-
1 tbsp Oil
1 tbsp Butter
Salt, to taste
1 tsp Red chilli flakes (optional)
1 tsp Oregano
1 tbsp Tomato purée
1 tsp Garlic paste
1 tsp Paprika
2 tsp Cajun seasoning
 
 
Method
Step 1 – Cook the pasta as per packet instructions, reserve 2 cups of its water before draining.
 
Step 2 – Cut the chicken breasts into thin strips, add the cajun seasoning and mix to coat well. In a large pan, on medium heat, add the oil, once hot, add the chicken and stir-fry for 5 minutes. Remove and set aside. To the same pan, add the 1 tbsp butter, once melted, add the finely sliced onions, and saute for minute. Now add the garlic paste and saute for a further 1 minute. Now add the tomato puree and saute for another 1 minute. Next add the sliced peppers, paprika and oregano and salt. Saute for another 1 minute. Add the chicken back to the pan and mix to combine. Turn the heat down to low, pour in the 200ml double cream and 1 cup of pasta water, simmer for 5-6 minutes. Now add the pasta and gently stir to combine. (If you prefer a thinner sauce, add the remaining cup of pasta water). Remove from the heat.
 
Step 3 – Top with fresh parsley, parmesan and chilli flakes. Enjoy!
