Chinese Style Chicken Thighs

This has midweek meal written all over it! Easy to prep and bursting with delicious Asian flavours. This recipe is about to become a staple in your homes if you like Asian food!

Ingredients
1kg Chicken thighs (bone in, skin on)
4 Garlic cloves , crushed
2cm piece Ginger, grated
2 tbsp Sesame oil
1/3 cup Rice wine vinegar
1/4 cup Soy sauce (dark)
2 tbsp Honey
2 tbsp Brown sugar
1/2 tsp Chinese 5 spice
1 Red Chilli, finely sliced (optional)

Method
Step 1 – Put the chicken thighs in a roasting dish. In a small bowl, mix together the sesame oil, honey, sugar, soy sauce, rice wine vinegar, 5 spice, garlic and ginger. Pour over the chicken, coating well. Let it marinade for an hour.

Step 2 – Heat oven to 200C/180C fan/gas 6.
Roast the chicken skin side up, for 35 – 40 mins, baste half way through. Check the internal heat with a food thermometer, I use @thermapen.

Step 3 – Top with the sliced red chillies and serve with stir fried rice! Easy as!
